Red Stixs in Water Mill was the scene of an epic challenge yesterday: the #Sandwar, a sandwich throwdown to benefit the American Cancer Society.
I stopped in and visited the kitchen not too long before the friendly competition heated up. There The Sandwich King, Jeff Mauro, was smiling and  hamming  it up–figuratively, as is his schtick as the funniest chef in the world, and literally, as he prepped his Mortadella and Fig Melts. More seriously (there was fried fish to contend with after all) but still smiling were Stephanie Smith and Eric Schulte of 300 Sandwiches fame, who were busily battering up sandwich filler for the Fishkiller Fish Cutter.
Unfortunately I couldn’t stay to witness the competition, judged by Geoffrey Zakarian, Jill Martin and David Schulman, but I did get a chance to share some tasty tequila cocktail recipes with the mixologists from Don Julio. You’re welcome.

1.5 oz. Don Julio Blanco
.75 oz. Agave Nectar
.75 oz. Fresh Lime Juice
Garnish: Fresh Lime Wedge
Glassware: Rocks Glass
Prepare: Build ingredients into a Boston Shaker, then add ice and shake vigorously. Strain over ice in a rocks glass and garnish with a lime wedge.

2 ounces Don Julio Blanco
.5 ounce Simple Syrup
.5 ounce Lime Juice
Garnish: 2 Pieces of Pineapple and 1 Slice Jalapeño
Glassware: Rocks Glass
Preparation: In a shaker or mixing glass, muddle jalapeño and pineapple. Add lime juice, simple syrup and Don Julio Blanco. Shake and strain over ice into a rocks glass. Garnish with Pineapple and jalapeño.

1 ounce Tequila Don Julio Añejo
1/2 bar spoon Agave Nectar
2 Dashes Angostura Bitters
Garnish: Orange Peel
Glassware: Rocks Glass
Preparation: Add agave nectar and Angostura bitters into a rocks glass. Add Tequila Don Julio Añejo. Stir contents for 30 seconds. Garnish with orange peel.
